Sunday, April 18, 2010. More pictures from Ireland. There is not much to do in Shannon, that's for sure. Last night we went to a medieval dinner at Bunratty Castle because it was half off due to no one being able to go because of all the delays from the volcanic ash mess. Which I have to admit, I'm a little more than frustrated with. Also, my stomach is having severe pains and I'm not too happy about that either. Really I'm just super frustrated in general. So here are some more pictures in any case.

Luckily, I now am in possession of a new one that is very pretty and works beautifully. Saturday, January 30, 2010. Rain, Hail, Snow. So today was nice- besides the weather. We went to the bank right away in the morning and set up our accounts so we can get our food stipend wired to a bank account every month. C'était simple! This past week in Ireland has been amazing- beautiful weather, great food, spending all day outside, the Cliffs of Moher, the Aran Islands, Doolin, and traditional Irish dancing! The semester wraps up : rainy days, finals, the park, saying goodbyes, etc. etc. The weather actually stopped being weird for one whole day on Sunday so that Meagan, Sarah and I were able to spend the whole afternoon out at the Parc du Thabor and have a picnic! What can be better than some freshly steamed artichokes? Take your artichokes - the globe type are so lovely. trim off the prickly parts on the end if you can be bothered. If not, steam them for an hour in a pot with water, white wine and some garlic. Enjoy with some fresh mayo or as we do the melted butter. Pull off the leaves, dip, scrape and enjoy! Wednesday: Blueberry Corn muffins. Always delightful. Here's what to do:. 1 1/4 cups unbleached organic flour. 1/2 cup organic cornmeal. 1/2 cup brown sugar. 1 tablespoon baking powder. 1/2 cup butter, melted. 1 egg, beaten. 1 cup frozen blueberries. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners. Bake in preheated oven for 20 minutes. Let muffins sit for 10 minutes before removing from the pan. Oh the decadent treat of O-rings! We have our favorites once in awhile over at Pepperland Cafe. In South Berwick, Maine. It's our "regular" and once in awhile we order these deadly delicious items. There are always too many for two people to consume and leftover fried food seems less than a good idea. Our delightful waitress suggested having them for breakfast with eggs, so we came up with this concoction which was incredibly good. We served them with a dollop of Pepperland Cafe's. Monday: Rolled omelette with mushrooms. Easy peasy breakfast, brunch, light dinner or lunch! Wisk 2 eggs to a froth in a bowl. Add a dash of salt, pepper and basil. Slice thinly, four button top mushrooms and a little sweet onion or scallion. Heat a shallow frying pan to red hot and coat the pan with a teaspoon of butter. Thursday: Apple cinnamon muffins. Simple and slightly sweet -. 2 cups all-purpose flour. 1 tablespoon baking powder. Generous gratings of nutmeg. 1/3 cup vegetable oil. Mix the dry ingredients into the wet. Add 1 cup of finely diced apples and mix quickly. Mixture will be lumpy.
