Friday, August 27, 2010. Raw Milk Mozzarella Cheese. I finally did it! But, it's fun. Satisfying. And, at least it's not an ultra-pasteurized milk product. I've had fun trying some new recipes that call for mozzarella cheese. Plus, it gives me a redeemed use for the pill splitter I needed to purchase for one of the meds I had been on - the splitter divides the rennet tablets nicely. :). There's a huge variety of recipes out there, but this is how I go about it:. 1 ½ t. citric acid. 188; rennet tablet.

Saturday, July 3, 2010. This is the classic Broccoli Salad that everyone loves. I tried giving it a healthful tweak by using yogurt in place of the mayo. I'm not ready to recommend that yet; there's got to be a better option, but I haven't figured it out - I'll keep working at it! But, I did substitute sunflower seeds for the bacon which worked nicely. My broccoli is continuing to produce sideshoots despite the initial rabbit onslaught, so I'm quite pleased. :). Preheat oven to 400 degrees. Brush a 9 1/2" deep-dish pie plate with 1 t. olive oil. Drain any liquid from roasted zucchini, onion, and peppers (if leftover from previous meal); place in pie plate.
