Monday, September 26, 2011. Bacon and Eggs Breakfast Casserole. All week long I had been wanting a lazy weekend, but I knew it wasn't going to happen. Saturday morning a guy was coming to cut a tree that was half uprooted during a recent storm. Then Saturday evening company was coming over for dinner.On Friday night our dinner plans got cancelled. Then the guy cutting the tree couldn't make it.Yay! So I get my lazy weekend.and boy did I deserve it.Last week work was rough. That Skinny Chick Can Bake.

Tuesday, May 31, 2011. Baked Oatmeal with Banana and Blueberries. Well not exactly, but all us food bloggers know that being a photographer is part of the job. Soft light always makes better photographs. The sun's light is softest early in the morning before the sun is directly over head. So this morning while my oatmeal baked, I went out in the yard and snapped a few photos. I've always been interested in macro photography. Here are a few of my favorite shots. April Showers sure do bring May flowers!

Thursday, April 28, 2011. Roasted Asparagus and Red Onion Quesadillas. Luckily we have electricity, so we can have home cooked meals. So for a very simple dinner I whipped up these quesadillas. 65279; Roasted Asparagus and Red Onion Quesadillas. 1 lb asparagus, tough ends trimmed. 1 large red onion, cut into eighths. 8 oz pepper jack cheese, shredded. 3 tbs olive oil. 8 6-inch tortillas, I used whole wheat. These make a great simple dinner, but they also would make great appetizers. My Kind of Cooking.

Wednesday, April 11, 2012. Hamburger Kebabs with Fresh Red Chutney with Almonds. Tired of the same old burger? I love a good burger, but I'm always looking to try new things.and lately Madhur Jaffrey has been my "go to" when it comes to finding new recipes. So this burger recipe from Pakistan.OK, I don't think they call them burgers.Chappal Kebab or Chapli Kebab (I've seen it spelled both ways), comes from her book Madhur Jaffrey's Quick and Easy Indian Cooking. Two was perfect for me! 1 tsp ground cumin.

Sunday, March 25, 2012. The Best No Bake Banana Pudding - What advice do you have for new bloggers? Banana pudding has to be my all time favorite Southern dessert. My mom's is the best! Nilla Wafers.bananas.from scratch pudding.topped with real meringue, hot out of the oven it can't be beat. Well it's not my mom's, but this recipe is still REALLY GOOD!
